I'm sure the majority of people have heard of gluten free diets by now. In the supermarkets we see gluten free on the labels, restaurants are now including it in the menus, and we hear all the gluten free jokes. For a population of individuals with celiacs being gluten free is no joke. In addition to celiacs, gluten tends to be on the rise with food sensitivities producing numerous symptoms we don't even associate with our diet.
